I ask my computer for information about which parts of a food animal are best for eating.

My computer rolls its eyes and gives me a list of websites regarding angus prime steaks.

Clearly, this is something where I'll need an actual library.

Muscles of course, but beyond that heart, lungs, liver, tongue, and brain are usually safe to consume. Beyond that my knowledge grows fuzzy.

I know that pretty much all of it's edible, but I keep running into references to organs being incredibly fatty, or storing toxins. Plus I'm trying to find cheaper cuts, and I'm not sure how much of this is even sold anymore. (Oddly, people don't seem to want to cook things like blood)

Have you tried researching butchery (not sure if that's the correct term) or like arts?

That's a good idea, but trying it, I ran into more about angus steaks.
